I have an insane love for noodles, and its a struggle to satisfy my cravings sometimes especially on days where I decide to be kinder to my body and give it a break.
This is my take on a peanut style noodles with simple greens without the guilt. The secret? Konjac noodles :)
Ingredients
1 pack konjac noodles (I used fettucine style)
2 tbsp peanut butter (not sweet)
1 tbsp soy sauce
1 tbsp hot water
1 cup Shanghai greens or bok choy
Chilli oil (optional)
Instructions
Mix together peanut butter, soy sauce, and hot water
Blanch greens and then set to the side
Blanch konjac noodles using same water
Dry noodles thoroughly
Mix noodles with sauce
Serve greens on side
Have with chilli oil (optional)
