Brussel Sprouts with Black Garlic Sauce

I never liked Brussels sprouts growing up, but created this based on the version from Yardbird where the bitterness was mellowed out by the black garlic.


  • 300g brussels sprouts

  • 4-6 cloves garlic, sliced

  • Soya milk

  • Olive oil


  • 1 tbsp black garlic paste

  • 1 tbsp balsamic vinegar

  • 1.5 tbsp light soy sauce or tamari

  • 3 tbsp olive oil


  1. Soak garlic in soya milk overnight and leave in fridge

  2. Remove garlic from the milk and fry until crispy

  3. Set aside and let drain

  4. Cut Brussels sprouts in halves or quarters depending on their size

  5. Toss in olive oil

  6. Roast in pre-heated 220C oven with grill on for 15 mins or until slightly charred

  7. Mix together garlic paste and balsamic vinegar

  8. Slowly add remaining sauce ingredients

  9. Toss Brussels sprouts in sauce and top with garlic chips
