Had fresh turmeric in the fridge and didn't know what to do with it. Somehow it added up in my brain to use it for a cauliflower soup. Super filling and no regrets!
Ingredients
1 large cauliflower, separated into florets
1 small white onion, chopped
4 garlic cloves, minced
1/2 piece fresh turmeric root, sliced
1/4 tsp tarragon, dried
1 tsp dill, dried
1 bay leaf
1 1/2 - 2 cups plant milk
Olive oil
Salt
Pepper
Instructions
Preheat oven to 220C
Coat cauliflower in olive oil and season with salt
Roast in oven until slightly charred
Sauté onions, garlic and turmeric until well-browned over medium heat
Add cauliflower, bay leaf, and dried herbs
Cover with water and reduce liquid by half
Leave to cool slightly
Blend until smooth
Add plant milk to desired consistency
Bring back to the boil
Season with salt and pepper
