Mix some BBQ corn with Mexican flavors in mind
Ingredients
2 cobs of corn
1 red chilli, minced
¼ tsp turmeric
¼ tsp cumin, whole or ground
½ tsp smoked paprika
½ pc lime, juiced
Coriander
Olive oil
Salt
Pepper
Instructions
Brush corn with olive oil and char over open fire
Heat olive oil at high heat
In a bowl, mix together the corn, chilli and spices
Place mixture in pan – Don’t stir too often so that some parts of the corn get charred
Season with salt and pepper
Finish with chopped coriander and lime juice
