Charred Coriander Corn

Mix some BBQ corn with Mexican flavors in mind


  • 2 cobs of corn

  • 1 red chilli, minced

  • ¼ tsp turmeric

  • ¼ tsp cumin, whole or ground

  • ½ tsp smoked paprika

  • ½ pc lime, juiced

  • Coriander

  • Olive oil

  • Salt

  • Pepper


  1. Brush corn with olive oil and char over open fire

  2. Heat olive oil at high heat

  3. In a bowl, mix together the corn, chilli and spices

  4. Place mixture in pan – Don’t stir too often so that some parts of the corn get charred

  5. Season with salt and pepper

  6. Finish with chopped coriander and lime juice
