Got some eggplant from @magicorganicsco this week, and honestly some of the best I've had in a while! These guys really have some of the best produce I've come across for fresh and organic.
I had leftover spring onions and also hot long green peppers from the veggie subscription, so this seemed like a good recipe to try. Also the mood was super lazy at home that day, so figured simple was best
Ingredients
2 Japanese eggplants, cut into small strips
3 cloves garlic, minced
1 tbsp ginger, grated
1 red chilli, minced
1 hot green pepper, minced
1.5 tbsp light soy sauce
2 tbsp Chinese black vinegar
1/2 tsp coconut sugar
Olive oil
2 stalks spring onion, chopped
Instructions
Heat the oil on medium heat and fry the eggplant - constantly turn once each side has browned
Put eggplant aside in a separate bowl
Add a bit more olive oil to the same pan, add garlic, ginger, chillies and pepper until aromatic
Add in eggplant to the pan
Add soy sauce, vinegar and coconut sugar
Mix together
Top with spring onions
