Ginataang Langka aka Filipino Vegetable Stew with Coconut Milk



Being half Filipino, I grew up with a lot of comfort foods that were extremely heavy on the meat side. I crave these old favorites a good part of the time, and decided to try making ginataang langka.


This dish normally has jackfruit, prawns, pork, fish sauce and more in it. So instead I did a couple of easy switches and it hits the spot especially with some quinoa on the side


Ingredients

  • 1 x 500g jar unripe jackfruit

  • 2-3 cups snake beans

  • 8 cloves garlic

  • 1 white onion, sliced

  • 2 chilies, minced

  • 2 cups coconut milk

  • 2 bay leaves

  • 1 veggie stock cube

  • 1 calamansi or lime (to taste)

  • 1-2 tbsp liquid aminos (to taste)

  • Pepper

  • Olive oil

Instructions

  1. Heat the oil on medium heat and fry the garlic and onions

  2. Add the chillies

  3. Add the coconut milk, bay leaves, stock cube and simmer for 5 mins

  4. Add jackfruit and snake beans

  5. Cook until beans are tender

  6. Add calamansi/ lime, liquid aminos and pepper to finish

  7. Serve with quinoa or wild/ brown rice
