I've been hunting around for a while on a recipe that didn't rely on oats (just for the sake of variety and because I wanted a challenge), and finally tracked one down that looked and tasted amazing! The hemp seeds were a total game changer as well as some homemade almond butter. Chewy texture and the balance of the salt keeps me going back for more.
Keeps well in the freezer, which is a huge plus as I cook in batches and get bored of flavors easily.
Ingredients
1 cup homemade almond butter (no additional oil)
3 large medjool dates, pitted
2/3 cup hemp seeds
1/3 cup chia seeds
1/3 cup protein powder (I like vanilla)
1/2 cup water (or as needed for the consistency as the almond butter is thick)
1/2 tsp salt (or more to taste)
Instructions
Blend the almond butter and medjool dates together until smooth
Mix in the rest of the ingredients until it becomes an extremely thick paste-like mixtures
Add toppings if you would like - e.g. desiccated coconut, cacao nibs, etc
Place in freezer
Remove to cut
Place back in freezer or fridge (if you're going to eat immediately)
