Masala Chai

Updated: Jul 28, 2021

I'm super sensitive to caffeine, but adore the earthiness and warmth of a good latte first thing in the morning (which I still have once in a while, but in moderation). As soon as I had my first Masala Chai Latte with soy milk, I was hooked. The warming spices, the earthiness and that slight caffeine boost did it for me.

I make the base blend in bulk (without the "milk) and keep in the fridge so that its super quick to make first thing in the morning.

Ingredients

  • 20-25g black tea

  • 5-7 cups water depending how strong you want it

  • 2 sticks ceylon cinnamon

  • 2 big thumbs of ginger, sliced

  • 1 tbsp whole cloves

  • 1 tsp nutmeg

  • 1 tsp black pepper

  • 1 tbsp star anise

  • 8 pcs cracked green cardamom

Instructions

  1. Chuck everything into a huge pot

  2. Bring to a boil

  3. Leave on a simmer for 1 hour

  4. Leave to fully cool for 6 hours

  5. Bottle and store in fridge

To make in the morning, add masala chai mix to a saucepan, add desired amount of plant milk and a bit of stevia (or sugar if you're feeling naughty that day)
