
I'm super sensitive to caffeine, but adore the earthiness and warmth of a good latte first thing in the morning (which I still have once in a while, but in moderation). As soon as I had my first Masala Chai Latte with soy milk, I was hooked. The warming spices, the earthiness and that slight caffeine boost did it for me.
I make the base blend in bulk (without the "milk) and keep in the fridge so that its super quick to make first thing in the morning.
Ingredients
20-25g black tea
5-7 cups water depending how strong you want it
2 sticks ceylon cinnamon
2 big thumbs of ginger, sliced
1 tbsp whole cloves
1 tsp nutmeg
1 tsp black pepper
1 tbsp star anise
8 pcs cracked green cardamom
Instructions
Chuck everything into a huge pot
Bring to a boil
Leave on a simmer for 1 hour
Leave to fully cool for 6 hours
Bottle and store in fridge
To make in the morning, add masala chai mix to a saucepan, add desired amount of plant milk and a bit of stevia (or sugar if you're feeling naughty that day)
