
We all have our own versions of comfort food, but I feel like many of us can agree that pasta is definitely one of the top ones.
Making a good sauce with enough depth of flavour takes ages, so this is one that I make in a big batch and stuff the leftovers in the freezer. When I say big batch, I'm talking a 6-7 litre pot.
Ingredients
2 carrots, diced
2 onions, diced
1 bunch celery, diced
16 x tomatoes, diced
8 cloves garlic, minced
1/2 bottle red wine
2 bunches fresh basil, chopped
1 tbsp dried thyme
Olive oil
Salt
Pepper
Instructions
Heat the olive oil on medium heat
Sweat the carrots, onions and celery until cooked through
Add the garlic and tomatoes and cook until the tomatoes start to break down
Add the red wine and thyme
Leave for 1 hour on a simmer
Let cool slightly
Blend using an immersion blender, food processor or whatever you have lying around
Season to taste
Add the basil
Add to your favourite pasta
*This recipe is also a great tomato sauce base for other dishes like pizza
