Curry in a hurry without the simple carbs (quinoa instead of rice) and everything chucked into one pot
Ingredients
2 big potatoes, cubed
1 cup of fresh peas
1 onion, minced
1 cup quinoa - washed
1 tbsp Mustard seeds
1 tsp Curry powder
1 tsp Cumin, ground
1 tsp Turmeric
Salt
1 Chilli, minced
4 cloves garlic, minced
Soy milk
Water
Instructions
Medium heat
Add olive oil to pan & fry turmeric, cumin, mustard seeds until they start to pop
Add onions, garlic, chilli, fry till onions brown
Add potatoes & quinoa, fry for a minute to mix it up evenly
Add enough water to fill bottom & put lid on pan
Let simmer, stir occasionally, add more water if needed
Just before potatoes cook completely through, add the peas
Add a bit of soy milk and curry powder
Cook the peas as much or little as you want and season to taste
