Potato Pea Quinoa Curry

Curry in a hurry without the simple carbs (quinoa instead of rice) and everything chucked into one pot


  • 2 big potatoes, cubed

  • 1 cup of fresh peas

  • 1 onion, minced

  • 1 cup quinoa - washed

  • 1 tbsp Mustard seeds

  • 1 tsp Curry powder

  • 1 tsp Cumin, ground

  • 1 tsp Turmeric

  • Salt

  • 1 Chilli, minced

  • 4 cloves garlic, minced

  • Soy milk

  • Water


  1. Medium heat

  2. Add olive oil to pan & fry turmeric, cumin, mustard seeds until they start to pop

  3. Add onions, garlic, chilli, fry till onions brown

  4. Add potatoes & quinoa, fry for a minute to mix it up evenly

  5. Add enough water to fill bottom & put lid on pan

  6. Let simmer, stir occasionally, add more water if needed

  7. Just before potatoes cook completely through, add the peas

  8. Add a bit of soy milk and curry powder

  9. Cook the peas as much or little as you want and season to taste
