Another challenge from @magicorganicsco to do a quick recipe that could be kept at room temperature for an event. This is super simple and takes almost no time to put together. I'm also a sucker for pumpkin and mint, so this seemed to be a perfect fit
Ingredients
1 large bunch of mint, leaves picked and chiffonade
Olive oil - just enough to cover the cut mint leaves
Apple cider vinegar - half of the olive oil
2 cloves garlic, grated
Salt
Pepper
Pumpkin
Instructions
Grill/BBQ the pumpkin until softened - or roast in the over
Mix together all the other ingredients
Top pumpkin with sauce
