Pumpkin with Mint Dressing

Another challenge from @magicorganicsco to do a quick recipe that could be kept at room temperature for an event. This is super simple and takes almost no time to put together. I'm also a sucker for pumpkin and mint, so this seemed to be a perfect fit


  • 1 large bunch of mint, leaves picked and chiffonade

  • Olive oil - just enough to cover the cut mint leaves

  • Apple cider vinegar - half of the olive oil

  • 2 cloves garlic, grated

  • Salt

  • Pepper

  • Pumpkin


  1. Grill/BBQ the pumpkin until softened - or roast in the over

  2. Mix together all the other ingredients

  3. Top pumpkin with sauce
