Spinach Alfredo

After years, I have finally cracked the secret to vegan, nut-free, gluten-free, low-carb creamy alfredo pasta. Quite a mouthful and quite a lot of work. The secret - Konjac noodles, hempseeds and nutritional yeast (duh!)


  • 1 onion, finely chopped

  • 3 cloves garlic, finely chopped

  • 2 packets of shirataki konjac noodles - I chose the spinach flavored Miracle Noodles

  • 3/4 cup hempseeds

  • 3/4 cup nutritional yeast

  • 3/4 cup water

  • 2 cups baby spinach

  • Parsley, chopped for garnish

  • Olive oil

  • Salt

  • Pepper


  1. Blend together the hempseeds, nutritonal yeast and water until smooth

  2. Season with salt and pepper

  3. Rinse the noodles and drain

  4. Heat olive oil on medium heat and sauté the onions and garlic until translucent

  5. Toss in the noodles and sauce

  6. Heat through for 2 mins

  7. Take off the heat, add baby spinach and parsley
