Sugar-Free Cacao Chia Pudding



I have a bit of a love/ hate relationship with chia puddings. Simply because it took me a while to get the portion of liquid right for the consistency I wanted, and also because I tend to make too much. This was annoying because you can't really batch cook chia pudding unless you've got a huge family or making some to give away.


This quantity was enough for a few portions, and the consistency was truly pudding-esque vs. a solid clump. This year I've also been using a lot of stevia instead of sugar as I feel like it's a pretty decent substitute. Monk fruit is definitely another option for something that is more "guilt-free" if you will.


Ingredients

  • 1/2 cup chia seeds

  • 1 3/4 cup soy milk

  • 1 tbsp cacao powder

  • 1/2 tsp stevia

  • Bananas, sliced

  • Cacao nibs


Instructions

  1. Mix together chia seeds, soy milk, cacao and stevia

  2. Leave overnight in the fridge

  3. Top with sliced bananas and cacao nibs or any other fruits/ seeds that you prefer
