Tahini Blondies

For when you want a fudgy brownie with less chocolate


Ingredients

Wet

  • 2 flax eggs (2 tbsp flaxmeal + 6 tbsp water – leave to sit for 15 mins

  • 1 cup coconut sugar

  • ½ cup tahini

  • ¼ cup coconut oil, melted

Dry

  • 1 ½ cups fine almond flour

  • ½ cup coconut flour

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 cup dark chocolate chips


Instructions

  1. Preheat oven to 180C

  2. Grease the pan with coconut oil and then lightly cover with coconut flour

  3. Mix together all the wet ingredients in a bowl

  4. Add the dry ingredients (except the chocolate chips) to the bowl and mix together well

  5. Fold in the chocolate chips

  6. Add batter to the pan and spread evenly

  7. Bake for 18-25 mins or until golden – Cook for a shorter period of time if you want it fudgier

  8. Leave to cool

  9. Cut into squares

  10. Store in fridge
