Vegan Garlic Aioli

I always save the aquafaba from when cooking chickpeas and make this. It stops me from having to buy the store version that probably has chemicals in it and it reduces the food waste. Oh, also, its a free ingredient :)


Ingredients

  • Aquafaba from 1 can of chickpeas or 125g of dried

  • 3 Cloves garlic

  • ½ Lemon, juiced

  • 500ml Olive oil

  • Salt

Instructions

  1. Reduce aquafaba by half over medium heat in a saucepan

  2. Leave to cool

  3. Place all ingredients in a food processor or immersion blender

  4. Season with salt
